  • 2 pints chicken stock (1.2 liters).

As I mentioned earlier, the preparation of the chicken soup is simple. Just follow these straightforward steps:

  1. Melt butter in a large saucepan over medium heat. Gently fry up onions, carrots, and celery until soft.
  2. Stir in flour. Cook 2 minutes, and then add chicken stock. Bring to a boil while stirring.
  3. Season using salt and pepper, and then reduce to a simmer for 10 minutes. Ensure vegetables are tender.
  4. Add chicken and cook until it is heated through.
  5. Stir in the parsley and season to taste before serving.
