- 1/2 cup almonds, soaked and dried;

- 1/3 cup sunflower seeds, soaked and dried;
- 1/2 tsp coriander, ground;
- 1/2 tsp ginger, ground;
- Hot paprika or chili powder;
- 1/2 tsp coriander, ground;
- 1/2 tbsp ground flax seeds;
- Black pepper;
- A medium onion;
- 1/2 tsp turmeric;
- 1 tbsp lemon juice;
- 2 tbsp tomato paste;
- 2 small tomatoes;
- 1 tsp vinegar;
- Some cilantro and basil;
- 1 garlic clove;
- A red pepper;
- Any type of lettuce;
- One carrot;
- A handful of spinach.
You will get 2 servings which you can store in the fridge for up to 3 days.
To prepare this healthy recipe, you need to put the nuts and seeds in the food processor. Add to it the tomato paste, and all the condiments and herbs. Put the vinegar and the lemon juice and pulse everything together until you get a chunky paste.
Chop up your carrot, pepper, tomatoes, and spinach. Mix the paste and the veggies together, put everything on a lettuce leaf, and you are done.
