You know my number one motivation for eating healthy? It’s not the fact that I sleep better at night and have more energy than… ever. It’s not even the fact that I lose weight whenever I eat healthy food. It’s the pretty pictures.
And if you’ve ever searched for images of healthy breakfast foods, half of them are in mason jars- smoothies, overnight oats, the whole shebang. But making something and then putting it in a mason jar so it looks pretty while I eat it in 10 minutes is a bit of a headache, so I got myself a bunch of breakfast recipes that you can make straight into the mason jar. Looks pretty and is really efficient. Just like us.
Baking Delight With A Mason Breakfast Casserole
– 4-oz mason jars;
– 6-10 eggs (6 if you use them whole, 10 if you use the whites for all but 2-3 eggs to get extra protein);
– 1/2-3/4 cup skimmed milk;
– pre-made pie crust or crescent roll dough (the kind you make yourself works best);
– breakfast sausage roll;
– 1 cup of shredded cheddar cheese;
– salt & pepper, to taste.
Cook your breakfast sausage by itself (no oil) in a non-stick pan, then set it aside. Heat the oven to 375 F. cut the dough into smaller pieces and place it on the bottom of the jar. Mix the eggd, milk, cheese and salt&pepper and throw in the cut-up sausage. Then pour it into the jar, and pop it in the oven for about 15-20 minutes.
