Healthy Asian Dinner: Chicken Soba Soup Noodles

Chicken Soba Soup Noodles (2 Serves)

For dinner let’s go for something really light: chicken soba soup noodles. Asians love their noodles in broth soup because it is light, it keeps you satisfied and it is easy to digest.

Ingredients:

  • 1 bundle Soba/Buckwheat Noodles – 284 calories;
  • 113 g Chicken, boiled, cooked and hand shredded into pieces – 120 calories;
  • 50 g Green Leafy Vegetables: Kale, Bok Choy, Cabbage etc. – 20 calories;
  • 750 ml Chicken Stocks – 52.5 calories;
  • 1 Garlic Clove, crushed – 4 calories;
  • 1/2 small Onion, diced – 14 calories;
  • 1 tbsp Goji Berries – 22.5 calories;
  • 1 tsp Olive Oil – 40 calories;
  • 1/2 tsp Toasted Sesame Oil – 18 calories;
  • 1 small Fresh Red Chilli (optional).

With these ingredients you will prepare 2 serving of 287.5 calories each.

Instructions: 

  • Bring a pot of water to a boil.
  • Cook soba noodles for 5 minutes or according to instruction.
  • Once noodles are cooked, drain and rinse with cold water.
  • Divide the noodles evenly into 2 bowls.
  • Mix 1/4 tsp of sesame oil into each bowl and set aside.
  • Bring a pot of water to boil and cook the chicken.
  • Once chicken is cooked, remove it from boiling water and set aside to cool down.
  • Once the chicken has cooled down, hand shred it into small pieces.
  • Coat a large pot with olive oil over medium-high heat.
  • Add crushed garlic and onion. Cook until fragrant and onion is slightly brown.
  • Add 3 cups of chicken stocks and bring to a boil for about 5 minutes.
  • Once broth starts to boil, reduce to medium-high heat.
  • Add in green leafy vegetables and goji berries. (I used seaweed.)
  • Cook for another 2-3 minutes or until vegetables have soften.
  • Pour broth evenly onto the noodles.
  • Top each bowl with shredded chicken, spring onions and fresh chopped chillies. Serve!

Soba noodles and seaweed are known to promote healthy bowel movements, reduce fat accumulation, help to keep you satisfied quicker and prevent overeating. They are also gluten-free.

Goji berries are very high in antioxidant. Consuming goji berries on a regular basis can help with anti-aging, to control blood sugar and appetite. So it can help towards weight loss.
