2 Easy Summer Pasta Dishes That Are Served Cold

Lemon Basil Summer Pasta Dish With Zucchini And Yellow Squash

This is an interesting recipe for anyone who is getting bored of plain pasta recipes. So probably for everybody. The combination of flavors is going to make you fall in love with pasta all over again, but as usual you are free to play around with the herbs until you find the ideal mix.

This is what you will need for this easy summer pasta dish:

– 2 ounces (2/3 cup) dry whole wheat penne;

– 1/2 cup chopped zucchini;

– 1/2 cup chopped yellow squash;

– 1/2 cup canned white beans, rinsed and drained;

– 1 lemon, juiced;

– 1/4 cup chopped fresh basil;

– 1 tablespoon Parmesan cheese;

– 1 tablespoon olive oil.

To start with, you should boil the pasta according to the instructions on the package. As usual, hold the salt and oil, as we can add them later. In a large non-stick pan, heat the olive oil, and add the zucchini and yellow squash, and toss around for a couple of minutes. Turn off the heat, and add the pasta. Toss this around too for a few seconds, then add the rest of the ingredients. One final round of toss-this-around and we are done. Put this in the fridge for an hour or two if you want a refreshing dinner, or serve on the spot if you just can’t take it anymore (I know I couldn’t).
